  • 4 large egg yolks
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup fresh key lime juice
  • 1 tsp grated lime zest
  • Whipped cream or meringue for topping (optional)
Instructions:
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix together the graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom and up the sides of a 9-inch pie dish.
  3. Bake the crust for 10-12 minutes, or until golden brown. Remove from the oven and let it cool.
  4. In a separate medium bowl, beat the egg yolks with an electric mixer until they become pale in colour.
  5. Gradually mix in the sweetened condensed milk, key lime juice, and lime zest.
  6. Pour the mixture into the cooled crust.
  7. Bake the pie for 15-20 minutes, or until the filling is set.
  8. Allow the pie to cool completely before refrigerating it for at least 2 hours.
  9. Serve chilled, topped with whipped cream or meringue, if desired.

Note: If you can’t find key limes, you can substitute them with regular lime juice
