  • 4 cloves of garlic, minced
  • 4 cups chicken broth
  • 2 cups diced potatoes
  • 1 cup diced carrots
  • 1 cup diced celery
  • 2 cups diced green chiles
  • 2 tsp. cumin
  • 1 tsp. oregano
  • Salt and pepper, to taste

Instructions:

  1. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the pork and brown on all sides. Remove the pork from the pot and set aside.
  2. In the same pot, add the onion and garlic and sauté until softened, about 5 minutes.
  3. Add the chicken broth, potatoes, carrots, celery, and green chiles to the pot. Bring the mixture to a simmer and then add the pork back in.
  4. Stir in the cumin and oregano, and season with salt and pepper to taste.
  5. Reduce the heat to low and let the stew simmer for about 1 hour, or until the pork is tender and the vegetables are cooked through.
  6. Serve the stew hot with a garnish of chopped cilantro and a dollop of sour cream.
