Ingredients:
- 2 lbs. pork shoulder, cut into bite-sized pieces
- 2 tbsp. vegetable oil
- 1 onion, diced
- 4 cloves of garlic, minced
- 4 cups chicken broth
- 2 cups diced potatoes
- 1 cup diced carrots
- 1 cup diced celery
- 2 cups diced green chiles
- 2 tsp. cumin
- 1 tsp. oregano
- Salt and pepper, to taste
Instructions:
- In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the pork and brown on all sides. Remove the pork from the pot and set aside.
- In the same pot, add the onion and garlic and sauté until softened, about 5 minutes.
- Add the chicken broth, potatoes, carrots, celery, and green chiles to the pot. Bring the mixture to a simmer and then add the pork back in.
- Stir in the cumin and oregano, and season with salt and pepper to taste.
- Reduce the heat to low and let the stew simmer for about 1 hour, or until the pork is tender and the vegetables are cooked through.
- Serve the stew hot with a garnish of chopped cilantro and a dollop of sour cream.
