  • 500 grams of fresh okra (bhindi)

  1. Wash the okra thoroughly under running water and pat dry with a towel. Cut off the top and bottom of each okra and slice them into thin rounds.
  2. Heat 2 tablespoons of oil in a non-stick pan or kadhai. Add cumin seeds and let them splutter.
  3. Add chopped onions and green chillies and sauté until the onions turn golden brown.
  4. Add the chopped tomatoes and cook until they turn soft and mushy.
  5. Add coriander powder, turmeric powder, red chilli powder, and salt to taste. Mix well and cook for 2-3 minutes.
  6. Add the sliced okra to the pan and mix well with the masala. Cover the pan with a lid and let it cook for 8-10 minutes on medium heat.
  7. Stir occasionally to prevent the okra from sticking to the bottom of the pan.
  8. Once the okra is cooked, sprinkle garam masala on top and mix well.
  9. Bhindi Masala is ready to be served. Garnish with coriander leaves and serve hot with rice, chapati, or naan.
