Ingredients

Here are the necessary ingredients to make up your Nigerian Jollof.

  • 2 cups of long-grain rice
  • 1 can of crushed tomatoes (14 oz)
  • 1 large onion, diced
  • 2 bell peppers (red and green), chopped
  • 4 cloves of garlic, minced
  • 1 teaspoon of thyme
  • 1 teaspoon of curry powder
  • 1/2 teaspoon of ginger powder
  • Salt and pepper to taste
  • 2 cups of chicken or vegetable broth
  • 2 tablespoons of vegetable oil
  • 1/2 teaspoon of bouillon powder (optional)

Steps in making it

Step 1

Wash and rinse the rice in cold water until the water runs clear. Soak it in cold water for 10 minutes.

Step 2

Heat the vegetable oil over medium heat in a large saucepan. Add the diced onion and minced garlic and cook until the onion is translucent.

Step 3

Add the chopped bell peppers and cook for 2-3 minutes.

Step 4

Stir in the can of crushed tomatoes and add the thyme, curry powder, ginger powder, salt, and pepper. Cook for 5 minutes, stirring occasionally.

Step 5

Drain the water from the rice and add it to the saucepan with the tomato mixture. Stir until the rice is evenly coated.

Add the chicken or vegetable broth and 1/2 teaspoon of bouillon powder (if using) to the saucepan. Stir well.

Step 7

Cover the saucepan with a lid and bring to a boil over high heat. Reduce the heat to low and let it simmer for 18-20 minutes or until the rice is cooked through.

Step 8

Stir the rice gently every 5 minutes to ensure even cooking and to prevent it from sticking to the bottom of the saucepan.

Step 9

Once the rice is cooked, remove it from the heat and rest for 5 minutes. Fluff it with a fork and serve.

Step 10

Serve the Jollof Rice with fried plantains, grilled chicken, or fried fish.

Note

You can add other ingredients such as scotch bonnets or chilli peppers for extra heat, carrots or green beans for extra crunch, and sweet corn for extra sweetness.
